Vegan coconut curry (Or..Dear Jenn #2)



I made this tonight with black rice and brocolli. It's all vegan except I put butter on the brocolli. The brocolli looks over cooked and nothing really look all that yummy in the pic..But it is! Try it!

Saute a chopped onion in coconut oil. When it's soft, sprinkle 2 Tablespoons of curry and stir to coat all the onion. Add 1 1/2 cups coconut milk, 2 Tablespoons maple syrup, 2 Tablespoons tamari and 3 or 4 sliced yams or sweet potatoes. Stir it carefully and cover. Simmer about 15 mins or until they are cooked how you like them.
