Dinner a la Ananda




Thank God for Food For Life and their gluten free brown rice tortillas. Then are gluten free AND delish. Go figure! This is is Ananda's recipe. I really love it.

In a pot add..

1 cup brown rice
1 cup diced tomatoes
1 cup diced bell peppers
1/2 cup onion
1 clove garlic
1/2 tsp celery seed
1 tsp cumin
1/2 tsp dill pwdr
1/2 tsp cayenne
1/2 tsp salt
1/2 tsp pepper

Boil and simmer for 45 mins or until rice is cooked. Add 2 cups of beans (I usually use black beans, but I cooked kidney beans tonight and it was good), chopped fresh cilantro, sqeeze lime juice and cubed avacado. Roll it all up in a tortilla w/some colby jack. Yum!

It's really good.
