Vegan Buttercream Frosting.



Yum!

1/3 cup coconut oil
1/2 cup maple syrup
1 heaping teaspoon lecithin
2 teaspoons vanilla

Melt the coconut oil, add lecithin and blend to emulsify. Transfer to a bowl and add vanilla. Beat until desired consistancy.

I forgot to melt the coconut oil first, so the end consistancy was a bit too oily for me. I added some peanut butter and it came out perfect and really yummy. We chowed it.
